Food Ingredients
DESCRIPTION

Our company has 55 years of experience as a supplier for the Chilean Food Industry. We are constantly looking for ways to provide the highest technical quality to our customers, such as working under the HACCP. System (Hazard Analysis Critical Control Points). This is just one of the reasons which make Alfa Chilena S.A. to have a privileged position among suppliers.

Our infrastructure consists of more than 12.000mt2 distributed in offices and production areas with 2 plants in Santiago, Chile and 1 plant in Córdoba, Argentina. Alfa Chilena also has offices in other cities and countries.


We have a fleet of large and small trucks for quick and efficient delivery of our products. Alfa Chilena S.A. has more than 100 employees distributed throughout its different sites including a great team of engineers and technicians highly qualified in food science.

Phosphate Blends

Hidrofos cuero: To be used for the preparation of pigskin emulsions treated with acid hydrolysis.

Hidrofos F: To be applied in the manufacturing of ground meat products, emulsified and cooked. It enhances the binding properties, yield and capabilities of binding added water.

Hidrofos SN: Complete product that is able to provide stability in the production of raw stuffed products. It can be used in all types of stuffed products that are subject to ripening process.

Hidrofos P: To be used in massaged and/or injected meats (hams, netted hams, pork chops, etc). It does not alter the flavor of injected meats. It enhances the natural flavor, and improves product yield by decreasing the losses due to weight, cooking and refrigerated storage.


Rindecolor
Antioxidant for pastes and hams.
Rindecolor makes the color expansion uniform and the processing time is considerably reduced.
It also stabilizes the color and it fixes the bright pink color of the cured meat´s natural pigment (cured stuffed products).

Proxil
Food grade antioxidant designed to stabilize fats and oils.
This product inhibits oxidative damages, rancidity and loss of the organoleptic characteristics in the production and storage of food, expanding its shelf life. Manufactured with active ingredients such as: T.B.H.Q., B.H.T. and B.H.A.
Salt Brine

Polvo praga
It provides the bright pink color of treated meats. It can be used as a pre-curing agent for thin pastes, and can be added directly into the cutter. For brines, it can be added into the agitation tank with the rest of the ingredients.


Sodium Lactate

Bactolac
Significantly inhibits the microbial development, extending the shelf life.
Intensifies flavor profile and improves the yield of processed meat products. Therefore it extends the freshness of the product over a longer time-period.
Wine powder / Antioxidant

Red wine (Cabernet Sauvignon), alcohol free. It is encapsulated in maltodextrin (food grade) and spray dried at low temperature, this allows the removal of water and alcohol retaining its aroma and healthy characteristics.
Our red wine is 100% natural because no coloring or flavoring has been added. 5 liters of liquid red wine equals 1 kilos of wine powder. The consumption is recommended because it has phenolic substances that prevent heart and brain vascular disease.
Red wine powder can be used as a natural source of flavonoids that prevent vascular accidents in the heart and brain. They can also be used as a natural flavoring and coloring in soups, sauces, creams, etc.


Antioxidants

G-40
Easy and fast application. It prevents oxidation in a variety of raw processed vegetables that are subjected to mechanical peeling, chopping or mincing such as potatoes for frying or minced avocados.
When applying G-40, there is no need to soak the potatoes in water to obtain a crispy/high quality product, saving oil and time in the process.

Proxil
Food grade antioxidant designed to stabilize fats and oils.
This product inhibits oxidative damages, rancidity and loss of the organoleptic characteristics in the production and storage of food, expanding its shelf life. Manufactured with active ingredients such as: T.B.H.Q., B.H.T. and B.H.A.

Natural Colorings

Caramel
Brown coloring that´s characteristic of cola drinks as well as many alcoholic drinks such as rum, cognac, etc. It is also used in bakery for the manufacturing of candies, ice creams, desserts, prepared soups, canned food.

Cochineal (carmine)
Natural coloring with red tones.
Flavorex is a cochineal-based food coloring. Stability under varying temperature conditions and oxidation. This will keep the desired color of the finished product over time. It can be used in stuffed products, pastas, sausess, cheeses, beverages, etc.

Annatto
Natural reddish coloring, derivative of the achiote trees of tropical regions of the Americas. It can be applied in a variety of meat products that require red coloring. (dairy and confectionery).


Whey Protein Concentrate

Whey protein is extracted from whey and is highly functional and nutritional.
It can be used as:
Protein content in nutritional drinks for sport people.
Protein bars and any type of products that require protein content, neutral flavor and excellent functional properties.
Potato Flakes

The potatoes used are firm and free of sprouts, green skin, diseases or spots.
The manufacturing process for dehydrated potatoes includes steam-cooking treatment, grinding and dehydration using a rotary drum dryer, transforming them into fine/low moisture slices, that are then comminuted into flakes or ground to the specific granulometry. The resulting flakes can be used to produce snacks, mashed potatoes, etc.


If you need flavoring for candies, dairy products, snacks, beverages, etc. Our compromise consists of developing raw materials that are efficient and stable in order to position your final product on the market. We own 2 labs and 2 production areas completely separated and climatized for those products requiring temperature controlled storage.

This area is oriented to products that require flavor applications: vanilla, chocolate, strawberry, lucuma, orange, chirimoya, etc. to products such as: yogurt, flan, ice cream, instant desserts.

Dairy:
This area is oriented to products such as cookies, chocolates, cereals, candies, that require flavor application: vanilla, chocolate, strawberry, eggfruit, orange, etc.

Culinary:
It´s oriented to products that require flavor and spice application, such as snacks, soups, sauces, dressings, pastas.

Meat Products:
For products that require flavor application such as beef, pork, chicken, bacon, etc. for the sauses industry.

Beverages :
Flavors that are applied to carbonated/non carbonated beverages, fruit juices, alcoholic beverages, instant juices.

Embutidora

Estos dispositivos nos permiten ofrecer reducción de partículas, vacumización, porcionamiento, formato y equipos de extrusión para todas las áreas de los mercados de procesamiento de alimentos. Nuestra bomba básica ha sufrido cambios innovadores que han llevado a la introducción de la Serie OPTI en 1994. La OPTI ha incorporado muchas capacidades nuevas e incomparables para el uso mediante procesadores mientras se retiene la "manipulación sin daño" objetivo mantenido a través de 40 años de innovación.

Válvula difusora externamente ajustable:
Con una entrada de 8", esta válvula permite a la Opti-Series transferir productos altamente viscosos y maximizar la exposición a los sistemas de vacío.

Tolva de Gran Poder:
Es hidráulicamente operada desde el panel de control por tacto para acceso completo en todas las áreas del producto durante limpieza. Vuelve con el toque de un dedo.

Tolva de Vacío Twin Auger (Doble Barrena):
Cuando se combina con el único y alto vacío diferencial de Marlen, le asegura máxima remosión de aire atrapado.
La parte de multi propósito lisa y abierta en su parte superior, al igual que las tolvas tipo barrena también están disponibles para cada aplicación de procesamiento.

Un Moderno Panel de Control de Auto Diagnóstico:
Elimina los líos de los controles tradicionales. El auto diagnóstico "ayuda" a la información y la adecuación del lenguaje extranjero.

Cámara de Bombeo de Dos Pistones:
Esto muestra una inclinación de 11º que aumenta el flujo del producto dentro de la cámara de bombeo. De carga más fácil en la cámara de bombeo asegura máximas eficiencias operativas.

Patentada Válvula Frontal Hidráulica:
Entrega positivo cambio de posición para un flujo continuo y parejo del producto. La abertura no obstruída de la válvula frontal además de nuestro nuevo diseño elimina partes sueltas y simplifica la limpieza.

Controlador Lógico Programable:
El Controlador con sistema opcional de retroalimentación espiral cerrada puede ser adecuado con una variedad de paquetes para cumplir con sus necesidades específicas.

Retort Packaging:

It´s a type of packaging that replaces the use of cans.
- Thermal Processing Efficiency.
- Shorter cooking time because it has been pre-cooked and sterilized.
- It improves the product quality: flavor, color and texture.
- Easy to handle and it can be kept at room temperature.
Multilayer Casing

Amiflex
It´s a five layer casing. Polyamide assures impermeability of the casing to air and other gases, as well as UV rays. These layers act as a barrier to prevent the microflora growth inside the product. Polyolefines stop evaporation, thereby thereby preventing weight loss during cooking and it also extends the shelf life of the finished product.
There are more than 30 colors available on Amiflex´s catalogue which you can choose from for your products.
The glossy surface provides great quality printed logos. 1 - 5 colors can be printed on both sides. In addition, they are manufactured in a variety of calibers (35 – 165 mm).

Amilux
AMILUX T was designed for the producers of sausages, spicy pork sausages (chorizos & minichorizos), for fried/smoked finished product.
Type A: has a closed end that provides the possibility to be used on automatic equipment.
Type R: has an opened end that provides the possibility to be used on rotary & an manual injectors.

Amiline
The casing AMISMOKE type Ako, Amko, Sko, Smko is designed for the producer of smoked stuffed products with a circular/semi circular shape.

Amismok
The casing AMISMOKE type Ako, Amko, Sko, Smko is designed for the producer of smoked stuffed products with a circular/semi circular shape.
The permeability to smoking fume permits to obtain glossy and crusty surface, as well as smoking taste and aroma.


Amitan
Is a monolayer sausage plastic casing, permeable to smoking fume. They use this casing to manufacture all sorts of the boiled sausage products and enclosed hams, made in conformity with respective technologies, involving smoking process, i.e. smoked frying. All said peculiarities permit to manufacture food products with traditional organoleptic properties (crust and smoking aroma), characteristic of the products, packed into the natural, protein-containing and viscous-made casings.


Fibrous Casing


VISKO®manufactures fibrous casing made of natural raw materials: long fiber paper and cellulose. Fibrous casing guarantees: resistance, steady diameter and good detaching properties.
You can choose the fibrous casing that is suitable for your stuffed products: cooked, dry or semi-dry, including hams and smoked cheeses.
- Calibers from 40 mm - 245 mm diameter.
- 12 colors available (another colors available upon request)

Storage: Fibrous casing must be stored in its original packaging on a dry, cold place (18ºC, 75-80% humidity). Fibrous casing, under the right storage conditions, can last one year.
Soaking Process: the correct soaking process ensures a trouble-free stuffing to obtain the diameter wanted.

Nippi

Casing that´s manufactured using collagen as the main raw material. Collagen comes from the hides of cattle that go under a complex treatment to get them prepared for further processing to obtain the final product. Collagen Casing can be classified in two main types: Small and Big collagen diameter.

The main difference is in the thickness of the casing wall and the treatment applied to collagen during the process to resist the harsh conditions when it´s been stuffed.




Dairy Substitute

Especially designed and formulated to provide the necessary nutrients for a balanced diet. It has higher solubility and homogenousness properties because it is spray dried.

It is available in different flavors: vanilla, strawberry, chocolate, apricot, banana, etc.

Product made of hydrolyzed cereals, shortening, milk solids, sacarose, vitamins and minerals (calcium and iron).
It can be consumed by children as well as adults.


Battering-Coating system

Product made of a starch blend that goes under high temperature conditions (fried), therefore it improves breading adherence and product texture. It also has flavoring elements that improve noticeable the organoleptic characteristics of the fried product.

This product delays the bacterial action extending considerably the shelf life of the manufactured product. It reduces product loss during storage period and cooking.

Battering is used on every product that goes through the process of breading and further cooking (frying). It is also used to coat products such as: chicken, turkey, shrimp, and vegetables in general.

Unit Pack

Enjoy the advantage of having all the ingredients of your formula in just one package.
It facilitates the production process, product weighing, stock control and minimizes errors due to raw material mix-ups.

In addition, when using unit pack there is no need to keep a stock of different raw materials, therefore the storage costs are reduced significantly, and it also expedites the product weighing process.

Animal Protein

Meat texturizer is a highly functional element used for the processing of meat.
It´s a pork protein based product, refined and concentrated with high dilution level.

The effect described becomes very noticeable on the finished product, providing the following properties:

- Improves cling, adhesion and consistency
- Immobilizes product´s natural juices
- Improves yield
- Improves adherence
- Improves flavor
- Reduces production loss
- Improves slicing
- Decreases exudation on sliced, vacuum packed products.

Breading-Coating System

It´s a mix of textured bread, granularly controlled with oleoresins and flavoring to coat products that are fried.
Breading: It can be applied to different types of foods (nuggets, escalopes, shellfish, vegetables, etc.).

Composition:
- Grated bread
- Flour
- Oleoresins and Flavorings
- Antioxidants
- Salt

Directions: Breading is applied directly by manual sifting or automatic breading machines
Wine Powder

Wine powder can be used as a natural source of flavonoids. Flavonoids help to prevent brain and cardio vascular accidents.

In addition it can be used as a natural flavoring and coloring in sauces, soups, creams, etc.
Red Wine, Cabernet Sauvignon type, alcohol free, maltodextrin encapsulated (food grade) and spray dried at low temperatures. This procedure gets rid of water and alcohol, retaining its bouquet and healthy properties.
Our red wine powder is completely natural, with no coloring or flavoring added.
1 kilo of wine powder = 5 liters of wine. It provides significant quantities of phenolic substances due to the flavonoids present in wine powder: gallic acid, quercetin, rutine, catequine, epicatequine and resveratrol. Its consumption is recommended since
these phenolic substances have properties that prevent brain and cardiovascular accidents.

Cochineal (carmine)

Cochineal is an insect, a primarily sessile parasite, that lives on cacti from the genus Opuntia, feeding on moisture and nutrients in the cacti. The insect produces carminic acid which deters predation by other insects. Carminic acid can be extracted from the insect's body and eggs to make the dye.

One reason for its popularity is that, unlike many commercial synthetic red dyes it is not toxic or carcinogenic.
The increase in demand is due to the need of incorporating Cochineal (carmine) to foods, pharmaceutical products and cosmetics. The cochineal-based natural coloring is dissolved in an alkaline, potassium hydroxide-based environment allowing the solubilization in foods. 5.2% cochineal (carmin) is stable under different temperature conditions and oxidation, prolonging the desired coloring, on manufactured products, over time.

Applications
It is used in the meat industry: stuffed products, sauses pastes, brine injection, etc.
In the dairy industry: yoghurt, cheese, dairy drinks, desserts, etc. In addition, it is used in pharmaceutical products, cosmetics, etc.
Natural liquid smoke, smoke powder (hydrosoluble and lipo soluble), smoke oil.

By using this product, it´s possible to replace the conventional smoking system which eliminates known carcinogens such as benzopyrene, tar and creosotes.
When applying liquid smoke, the differences in color are reduced noticeably. The final product is completely even.
Liquid smoke comes from the controlled burning of red woods and is considered GRAS by the FDA.
Natural smoke is suitable for meat products (sausess), cheese, smoked fish, snacks, etc. We offer a wide range of liquid smoke according to your requirements.

Dr. Peter M. Muriana (Ph.D) invited by Alfa Chilena S.A.
North American Doctor Expert in Listeria Visited Chile

The seminar “Death to Listeria” was held on Tuesday July 14, with a successful turnout. Doctor Peter M. Muriana (Ph.D) was the guest speaker, invited to our country by Alfa Chilena S.A. His research was the base to create the current FDA approved Listeria control regulation in the United States and Canada.

The Doctor shared his wide knowledge on the matter and answered questions on Listeriosis asked by the attendees. The expert explained several existing measures to confront this bacterial infection that, in human beings, can cause illnesses such as, septicaemia, meningitis (or meningoencephalitis) and encephalitis, normally preceded by symptoms similar to those for the flu, including fever.
