HITACHINO NEST BEER is a brand of our quality top-fermented ales. We started brewing HITACHINO NEST BEER in 1996 with a hint of our traditional sake brewing method. Since then, we've made a name and won numerous awards worldwide. HITACHINO has established the market in the U.S.A. since 2000, is now well known not only as a of unique "Owl" character, but also its innovative brews.

White Ale
A refreshing mildly hopped Belgian styled beer with a complex flavor of coriander, orange peel, nutmeg. White Ale has won gold medals at several beer conpetition in U.K. and U.S. This is deffinitely one of HITACHINO's top-selling beers both in Japan and U.S.

Japanese Classic Ale
Bottle-conditioned fine creamy head on top. Medium bodied feel with sweet bitter taste. It has a unique note of cedar and complex spicy yet mild aroma of British traditional hops such as Kent Goldings and Challenger.

KIKUSAKARI - Policy of Sake Brewing -
Materials - The most important factor of Sake brewing is the quality of the rice. We polish rice, scraping off the proteins and fats that are unnecessary components for brewing. The grade of the sake is set by the quality of the polished rice. The highest class sake is called DAIGINJO, which is brewed with 50% polished rice. 30% polished is average for common sake brewing, but most of the products in Kuichi Syuzou are brewed with rice polished down 40% with the same standard as DAIGINJO.
 
Sake contains 80% water, and thus plays an important role in brewing sake. Kiuichi uses natural, hard water from a spring with water suitable for fermentation.
 
 
Gekkakow
Available both in Japan and U.S.A.
Gekkakow is our most prestigious Vintage Sake. Gekkakow is brewed from "Yamada Nishiki" rice (polished down to 35%). Cold matured for over three years.

Kurakagami
Available both in Japan and U.S.A.
Kurakagami is exclusively brewed for the famous Japanese sake competition. This brilliant Daiginjo (rice polished down to 38%) has been awarded prestigious gold prizes. Please enjoy the rich and well rounded flavours of this golden sake.

Kurahibiki
Available both in Japan and U.S.A.
Kurahibiki is brewed with well polished (43%) special rice "Yamada Nishiki" which is best for sake brewing. This is an elegant sake with citrus and melon aromas and complex flavours.

Kurashizuku
Available both in Japan and U.S.A.
Kurashizuku's flavor, color and fragrance are enriched by the careful first steaming and pressing of its rice. Kurashizuku is Usu-Nigori, i.e. sake that has some slight sake yeast, rice and koji in the bottle. But, the bulk remains behind on the filtering cloth as Sake-Kasu ('cake').

Asamurasaki
Available both in Japan and U.S.A.
Red rice was cultured in ancient times, but is hardly used in modern times. This very unique sake is naturally red in color, and slightly sweet with some definite berry-like aromas and flavors. Asamurasaki gives the mouth a slight "spritz" feeling. Available in 720ml bottles
 
 
 
Tarusake
Available both in Japan and U.S.A.
Tarusake has been matured slowly in real Akita cedar barrels producing subtle aromas and flavors of cedar. This unique sake has some sweetness, initial pepper notes, a little bitterness and some detectable wood.

What's Shouchu?
Shouchu is a traditional Japanese distilled spirits which has a high alcohol concentration at about 20 to 45%. Each region in Japan has developed its own Shouchu from 500 years of history. Now Shouchu is variously characterized by the use of materials and methods of distillation. Shouchu is often drunk in straight, as well as on the rock. Its clean taste also works perfect in cocktails and infused drinks.
 
What's special about Shouchu 'KIUCHI' ?
Rice Shochu 'KIUCHI' is distilled from the Sake-Kasu (white sake lees) of our refined Daiginzyou Sake 'KIKUSAKARI'. This luxury Shochu has a complex flavor with pleasant rice aroma.
